More Details about burls:

A burl is a knobby-looking growth that can develop from un-sprouted bud tissue found on the outside of some trees. These burls can vary in size, but as a result of stress and pressure, the wood will have very incredible grain patterns that result. These are unique to each burl and create amazing patterns and beauty that are not found elsewhere in the tree. Often these burls can be very old resulting in a darker wood, since it is not common to find sapwood on a burl, and exposure to water can also create staining patterns that are very distinct and refined.

Removing a burl from a tree is healthy for it and will not kill the tree, when removed properly. In fact, a lot of times it actually help the tree thrive.
